My fingers still sting and they are tingly. I’m not having a heart attack or anything. I was just really irresponsible and neglected wearing gloves while I processed the peppers. I spent a couple hours washing, cutting and canning peppers this weekend. Still encouraged by my recent success I decided to ride that wave and start some new sauce. I’m not going the jalapeño route quite yet because I got a really good deal on these peppers. Honestly I don’t even know what kind they are I just know that they were on sale and I don’t see these too often. They have a beautiful red color so I cannot wait to try them in sauce. From the feel of my fingertips, I think these are going to have the heat my last sauce was missing.
